Kaylee: chef for A&E Coffee & Tea

Kaylee Sanders grew up in Nashua and has always loved cooking. She took culinary classes at Nashua North High School and after graduation, enrolled in the Culinary Arts Department at Nashua Community College.  As coincidence would have it, A&E Coffee & Tea was looking for an innovated chef as Kaylee was looking to take on more responsibility and further her culinary career. “We were trying to fill a unique position at A&E. We had never really offered food and were determined to add that to our cafe menu. We needed someone who could take over the program, yet work within our existing framework of the cafe,” said Emeran Langmaid, owner. “Honestly, we could not afford a really experience chef, yet we needed a creative, self-starter that was laid back enough to go with our flow.” Kaylee fit the bill. Her work experience includes diner and institutional cooking, both are somewhat limited in scope, yet provided her with a solid base of knowledge. A&E needed her to come in and set up a base menu of sandwiches, soups and salads. She started with a few sandwiches, including the Turkey Apple Cheddar and Roasted Portobello Mushroom.

As she became more familiar with our customer base, she expanded the offerings to include a vegan Roasted Acorn Squash and Sweet Potato soup, White Bean Chili with Chicken and Roasted Chicken salad with a scratch-made dressing. “The quality of flavor in scratch-made food is on par with the flavor quality we offer in our coffees and teas,” says Emeran. “It was critical to find a chef that understood the importance of local/fresh/quality to our core business. Kaylee has carried that mantra into the food side.”

In addition to soups, salads and sandwiches, Kaylee has also made Matcha Lemon sweet bread and assisted with the infusions for our specialty drinks, including our April Specialty Drinks:

Spring Break Latte-orange infused almond/coconut milk blended with white chocolate and espresso, served over ice.

Basil Pomelo Cortado-basil and pomelo infused milk blended with honey and espresso, topped with steamed milk.

Mango Espresso Cocktail-espresso forward cocktail made with chilled espresso; a blend of mango, lemon and grape juices; shaken and served in a stemmed glass rimmed in chocolate. In-house only.
